My Tasting Menu



Welcome to my seafood-inspired tasting menu, the perfect choice for a memorable dining experience where I invite you to savour the freshest catches from the sea and the bounty of the season that showcase the natural flavours and textures of fish and shellfish, enhanced with carefully selected seasonal ingredients.



To start, I would like to offer you a refreshing amuse-bouche of chilled oysters, served on a bed of ice with a mignonette sauce and a squeeze of lemon. This briny delicacy is a perfect way to awaken your taste buds and set the tone for the meal to come.




Then indulge in the luxurious flavours of the first course: Lobster Bisque, a classic French soup that has become a staple of fine dining. My version of this iconic dish is made with the freshest lobster, carefully simmered with aromatic vegetables and spices to create a rich and velvety broth.

The first thing you'll notice is the intense aroma of the seafood and the fragrant spices, smooth and creamy texture, with a luscious mouthfeel that coats your palate and invites you to savour every spoonful.

The centerpiece of the bisque is, of course, the tender chunks of lobster meat, which add a meaty and buttery flavor to the broth. Each piece of lobster is perfectly cooked, maintaining its delicate texture and delivering a burst of oceanic goodness with every bite.

To complement the richness of the bisque, I like to serve it with a dollop of crème fraîche, which adds a tangy and slightly sour note to balance the sweetness of the lobster.


To finish the dish, I sprinkle a touch of freshly chopped chives on top, which adds a subtle herbal note and a touch of vibrant green color to the soup.

Whether you're a seafood lover or a fan of French cuisine, this lobster bisque is a dish that will delight your senses and leave you craving for more.


Next, I present a succulent seafood experience with an exquisite fruits de mer plate, showcasing the finest selection of oceanic treasures from the Atlantic coast. Each element of this platter is hand-selected and carefully prepared to deliver a mouthwatering array of flavors and textures.

The centerpiece of the plate are the Atlantic prawns and red shrimps, which are plump, sweet, and perfectly cooked to showcase their natural sweetness and the bright red hue and delicate flavour of the red shrimps, which add a pop of color and a slightly firmer texture to the plate that also includes juicy and tender scallops, which are seared to a golden brown and seasoned with just a touch of salt and pepper to bring out their natural sweetness. The scallops are the perfect complement to the other shellfish on the plate, adding a meaty and buttery flavor that is sure to satisfy your palate.

Enjoy a selection of steamed mussels and clams, which are sourced from the freshest market and prepared to order. These bivalves are plump and juicy, with a slightly briny taste that is enhanced by the steam and the gentle seasoning.


Finally, I like to add a bunch of tasty winkles, which are cooked and served in their shells. They have a slightly chewy texture and a mildly sweet flavor, which adds a unique and satisfying dimension to the fruits de mer plate.

To enhance the flavours of the seafood, I will provide a selection of condiments, such as freshly squeezed lemon juice, tangy cocktail sauce, and a piquant aioli. These condiments are the perfect accompaniment to the fruits de mer plate, adding a touch of acidity, spice, and creaminess that elevate the flavours of the seafood.


As we go along the menu, you will savour the delicate flavours and textures of the seared sea bass, served with a refreshing lemon rice and herbs salad that will transport you to the sunny shores of the Mediterranean. Each fillet is tender, moist, and bursting with flavour. I like to sear the fillet to perfection, creating a crispy skin and golden crust that locks in the natural juices and aromas of the fish.

The sea bass is served on a bed of fluffy lemon rice, which is cooked al dente and seasoned with zesty lemon juice, aromatic herbs, and a hint of garlic. The rice is the perfect accompaniment to the fish, adding a bright and tangy flavor that complements the rich and buttery texture of the sea bass.

To complete the dish, we top the sea bass with a fresh and vibrant herbs salad, which features a medley of fragrant herbs such as mint, parsley, and cilantro. The herbs salad adds a burst of color and freshness to the dish, as well as a crunchy and textural contrast that balances the softness of the sea bass.

The combination of flavors and textures in this dish is simply exquisite, with each element perfectly complementing the other. The sea bass is succulent and flavourful, the lemon rice is tangy and aromatic, and the herbs salad is refreshing and herbaceous.

To wrap up the night, you will experience the perfect balance of sweet and tangy flavours with a delightful pavlova, a delicate meringue-based dessert with a crisp exterior and a soft, marshmallow-like center, generously topped with a velvety white chocolate whipped cream that adds a rich and decadent flavour to the dessert and a colourful medley of fresh red fruits.

The white chocolate whipped cream is infused with vanilla extract, which enhances the sweetness and adds a subtle and aromatic flavor. The cream is light and airy, making it the perfect complement to the delicate texture of the pavlova.

Every bite of this dessert is a symphony of flavors and textures that will tantalize your taste buds. The pavlova is crisp and airy, the white chocolate whipped cream is rich and velvety, and the red fruits are fresh and juicy.
